Sweet Potato Halwa

Ingredients used in Sweet Potato Halwa
• Corn meal - 1 cup.
• Sweet potato - (4-5) numbers.
• Ghee - (1-2) teaspoons.
• Cashew nut - 10 numbers.
• Raisin - 10 numbers.
• Cardamom powder - 2 teaspoons.
• Jaggery - 1 cup.
• Coconut (fresh grated) - 1/2 cup.
• Slivered almonds - 1/2 cup.
Method:
  • Soak cornmeal for 15 minutes and place it in the microwave for 2 minutes.
  • Boil sweet potato, peel the skin and grate it.
  • Heat ghee in a pan, add cashew nuts, raisins and saute it.Add sweet potato and saute until it is slightly colored.
  • Add cornmeal and cook it, add cardamom powder and mix nicely, later cook for 2-3 minutes with the lid on it.
  • Add jaggery and cook for 3-4 minutes until jaggery dissolves. At last add grated coconut, ghee and switch off the flame, mix it.
  • Now transfer to a serving plate and garnish with fresh coconut and slivered almonds.

Delicious SWEET POTATO HALWA is ready to serve.
