1. Boil potatoes. peel and mash. chop onion, green chillies and ginger finely.
2. Heat 1 tsp oil. saute onion. add chopped ingredients, salt and lime juice to taste. Mix well. remove.
3. add grated cheese; mix with sieved flour. add fat sufficient water ti make a stiff Dough. knead well till smooth. set aside at least for half an hour. roll out into puris 7.5 cm. (3'') in diameter and deep fry. serve hot.
