1.wash the spinach, remove all the coarse stems, place it in a saucepan, cover it with a tight fitting lid,and cook it with a pinch of salt for 3-4 minutes.transfer it into a serving dish.
2.melt the butter in a pan, add the flour and the seasoning and cook for a minute stirring constantly.
3.then add the chicken stock cream and cheese ;stir constantly till it thickness. keep the sauce warm.
4.heat the water in a skillet;add the vinegar;poach the eggs in the water-2 at a time for about 3 minutes.
5.remove the eggs with a slotted spoon and place them on the spinach .pour the sauce over the eggs and serve immediately.
