Directions | How to make Fondant Au Chocolat
 
Soften 150 g. of butter (leave it out until it is soft). You can put it in the microwave for a short time but don't melt it completely. Once the butter is soft, mix it with 150 g. of sugar and 1 pinch of salt in a bowl. Next, melt 200 g of chocolate in the microwave. Once melted, add 4 egg yolks mixing them in one at a time. Gather egg whites in a seperate bowl. Whiten egg whites with a mixer until fluffy then add a pinch of salt. Mix fluffed egg whites in 3 batches into the other bowl. Pour batter into a 10 inch diameter pan. Heat oven to 300 deg F (150 C) and place pan in oven for 30 to 40 minutes. To check when it is done, stab cake with a knife. If the knife is clean, it is done.
Recipe Tips
Don't remove pan from oven until the knife test is clean.
