1.cook the spinach in a covered pan for 2-3 minutes or till it wilts. 2.fry the tomatoes in 1/2 tbsp olive oil; sprinkle with seasoning and chives keep them aside. 3.heat 1/2 tbsp butter with 1/2 tbsp olive oil gently slip the eggs into the pan -2 at a time,sprinkle a little water and cover the pan. 4.remove the lid after about a minute and a half. 5.butter the brown bread slices put spinach on them, and top each slices with a fried eggs. 6.serve two slices in individual plates with tomatoes on the side.
