Ingredients used in Maddur Vada
• Curry leaves chopped - 1 springs.
• Cilantro/coriander chopped finely - 1/2 bunch.
• Hing - 4 pinch.
• Salt - to taste.
• Broken peanuts (without skin) - 4 tablespoons.
• White sessame seeds - 2 teaspoons.
• Green chillies chopped - 6-7 small.
• Onion finely chopped - 3/4 cup.
• Rava - 1/4 cup.
• Maida - 1/4 cup.
• Rice flour - 1 1/4 cup.
• Refined oil for mixing the dough - 1/3 cup.
• Refined oil - to fry.
• Cooking soda - (optional ) 1 pinch.
Method:
Mix all the ingredients together. Add little water if required to make a firm dough. Flatten out on plastic sheet. Poke the flattened vada with a fork. Deep fry till golden brown on both sides. Serve with chutney or ketchup!
