1.heat half the oil in a pan fry the garlic and the onions till golden brown,keep them aside. 2.heat the rest of the oil in another pan and make a omelette,cook each side for 2minutes then cut into 1'' x 2'' strips. 3.heat the chicken stock in a soup pot; add the chicken or pork, egg strips, coriander,spring onions,fish sauce,sugar,red chillies,and the seasoning. 4.serve hot garnished with fried garlic and onions and fresh coriander leaves.
