Ingredients used in Shrimathi
• Butter - 1/2 cup.
• Baking powder - 1 tablespoons.
• Baking soda - 1/2 teaspoons.
• Powdered sugar - 1/2 cup.
• Maida or all purpose flour - 1 cup.
• Yogurt - 1 tablespoons.
• Warm milk - 1/2 cup.
• Lemon drops - 1/2 tablespoons.
Method:

1) Mix milk and lemon drops. 2) Mix all the ingredients in one direction with hand or using a beater to make a smooth batter. 3) Consistency of the cake batter should be like idli batter. 4) Close and keep it aside for 2-3 hours. 5) Grease the cake pan with butter or ghee and smear some maida / all purpose flour and pour the cake mix. 6) Preheat the oven for 350 deg. 7) Place the cake pan in the oven. 8) Keep checking every 6-7 min if the cake is baked. Insert a toothpick into the middle of the cake. If the toothpick comes out clean, the cake is done. If the toothpick comes out with crumbs, or clearly shows wet cake batter, the cake is not finished cooking. 9) After 15 - 20 min, remove the cake pan and transfer the cake to a serving plate. 10) Finally you may decorate the cake with icing etc. You may add vanilla essence, chocolate essence, fruits, dry grpaes, tuty-fruty, raisins or any other ingredients / flavours as per your taste in the cake mix before pouring it into the cake pan.

Generally, eggs are usually added after whisking that helps to inculcate air into it to cause a fluffy and provides spongy nature to the cake. Additionally, it boosts both taste and texture that assist in raising the cake, but vegetarians don't worry because there are a variety of egg substitutes where they are able to use condensed milk or any egg substitute powder. Even though eggs are an essential ingredient to produce sponge cakes, it can also be made without eggs.

 

As suggested by its name the eggless sponge cake is made without eggs and it is very spongy, if you press the crust it springs back. Its spongy texture is used in making gateaux, pastries in which the cake soaks the fruit juices and helps to make the dessert extremely soft to eat. The sponge texture is accomplished by making the mixture properly aerated which can be accomplished by beating but simultaneously over beating can also spoil the cake.

 

Eggless sponge cake is a versatile cake by itself or also is a base for several fillings such as the Black forest cake, pineapple pastries, chocolate pastries etc. This cake is used for making numerous desserts and therefore has its own importance.
