Ingredients used in Vahrevahs Banana Dosai crepe
• Ghee-melted - 1/2 cup.
• Sugar - 1 tablespoons.
• Chopped cashewnuts - 3 tablespoons.
• Chopped raisins-(prevents them from bursting) - 2 tablespoons.
• Maida(all purpose) flour - 1/4 cup.
• Rice flour - 1/2 cup.
• Bananas-should be quite ripe - 4 numbers.
• Cardamom seeds-crushed to a fine powder - 1-2 pinch.
Method:
  • Peel and mash bananas in a large bowl.
  • Add raisins, cashews, rice flour, maida, sugar, and cardamom seed powder-The consistency should not be too thick not thin-The batter should drop from the spoon easily and not spread too much on the pan.
  • Heat a griddle or tava to medium heat-(The griddle should not be too hot or this will cause the dosa to become brown and burnt without properly cooking inside).
  • Drop small spoonfuls on the batter onto the griddle until you get appx 6 dosais-depending on the size of the griddle.
  • Put few drops of melted ghee on each dosai and turn when you see the bottom turning golden brown. Cook until another side is golden brown as well. This dosai can be served with spicy chutneys.
