Recipe of wamu kashayam (ajwain chai)

Ingredient Name Quantity Unit
Cardamom 1 Piece
Saunf (fennel Seeds) 1/2 Teaspoons
Ajwain (carom Seeds) 1 Teaspoons
Tea Leaves 1 Teaspoons


Boil ajwain, saunf and cardamom in 2 cup water. Then add good quality tea leaves to it and leave it for about 3-4 minutes. Add honey as per your taste before consuming it. One can also add a small piece of ginger.

Recipe Tips

Heating the spices with water in a pressure cooker can make it fast and can make it retain the fragrance more.

It would be better to dip tea leaves only for 1 to 1-1/2 min. Longer brewing times can make the tea taste bitter with some kind of tea leaves. To be sure, it is better to try dipping the leaves for 1, 2 and 3 min and taste yourself to know which gives you a better taste for the kind of leaves you are using.
Soaking the ajwain (carom) and saunf (fennel) seeds in water for sometime before beginning to make the tea can also improve the extraction of flavours from them.
