Ingredients used in Bhagara Baingan
• Garlic paste - 1 teaspoons.
• Large onion - 1 numbers.
• Coriander powder - 4 teaspoons.
• Turmeric powder - 1/2 teaspoons.
• Coriander powder - 1 tablespoons.
• Curry leaves - to taste.
• Fresh coriander leaves - to taste.
• Oil - to fry.
• Salt - 1 to taste.
• Dry coconut - 1/2 cup.
• Brinjals - 400 grams.
• Cumin seed powder - 2 teaspoons.
• Ginger paste - 1 teaspoons.
Method:
  • Grind roasted cumin seed powder, coriander and coconut.
  • Slit the brinjals and fry till it turns soft.
  • Heat the oil. Fry onions, ginger paste, garlic paste till it turns transparent.
  • Add turmeric powder, salt and ground mixture. Mix red pepper and add fried brinjals.
  • Add 1/4 cup of water and boil it for 5 minutes. Adorn with fresh coriander leaves.

Hello, Your website is very helpful and I have tried a couple of other dishes it turned out excellent. Just a suggestion, if we could try adding some roasted sesame seed powder and peanut powder along with cumin, coconut and dhaniya.
