Ingredients used in Bhagara Baingan
• Garlic paste - 1 teaspoons.
• Large onion - 1 numbers.
• Coriander powder - 4 teaspoons.
• Turmeric powder - 1/2 teaspoons.
• Coriander powder - 1 tablespoons.
• Curry leaves - to taste.
• Fresh coriander leaves - to taste.
• Oil - to fry.
• Salt - 1 to taste.
• Dry coconut - 1/2 cup.
• Brinjals - 400 grams.
• Cumin seed powder - 2 teaspoons.
• Ginger paste - 1 teaspoons.
Method:
Grind roasted cumin seed powder, coriander and coconut. Slit the brinjals and fry till it turns soft. Heat the oil. Fry onions, ginger paste, garlic paste till it turns transparent. Add turmeric powder, salt and ground mixture. Mix red pepper and add fried brinjals. Add 1/4 cup of water and boil it for 5 minutes. Adorn with fresh coriander leaves.
