Ingredients used in Bitter Gourd Egg Fry
• Eggs - 3 number.
• Bitter gourd (chopped) - 1 cup.
• Hot water - 1/2 cup.
• Salt - to taste.
• Dry red chilies - 4 number.
• Onions (chopped) - 1/2 cup.
• Potatoes (chopped) - 1/2 cup.
• Desiccated coconut powder - 1 tablespoon.
• Sesame seeds - 1 tea spoon.
• Turmeric powder - 1 tea spoon.
• Dry mango powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Garam masala powder - 1 tea spoon.
• Crushed pepper powder - 1/2 tea spoon.
• Jaggery - 1 tea spoon.
Method:
  • Heat oil in a pan, break open eggs into it, fry well, transfer to a plate, chop them into pieces of the required size and keep aside.
  • Soak chopped bitter gourd pieces in hot water seasonedwith salt.
  • Heat oil in a pan, add dry red chilies, strained bitter gourd pieces, fry for about 2-3 minutes, add chopped onions, potatoes and cook with the closed lid on slow flame till onions turn slightly golden brown in color.
  • Now add sesame seeds, desiccated coconut powder, turmeric powder, dry mango powder, coriander powder, cumin powder, garam masala powder, chopped egg omelette pieces, crushed pepper powder, jaggery and saute well.

Delicious Bitter Gourd Egg Fry is now ready to serve with hot rice.
