Ingredients used in Brinjal Curry
• Fenugreek seeds (methi daanay) - 1/2 tea spoon.
• Tamarind - to taste.
• Asafoetida powder (heeng) - pinch.
• Black gram - 2 tablespoons.
• Bengal gram - 5 teaspoons.
• Red chillies - 4 numbers.
• Coriander seeds (dhania) - 1 tea spoon.
• Brinjals (baingan) - 500 grams.
• Salt - to taste.
• Mustard (rai) - 1/2 tea spoon.
• Curry leaves (karhi patta) - 2 numbers.
• Cooking oil - 4 teaspoons.
Method:
  • Fry bengal gram, black gram, coriander seeds, fenugreek, chilies, asafoetida powder in oil them grind them together. Make a tamarind paste.
  • Then add salt, the ground mixture, and turmeric powder.
  • Fry chopped brinjals in oil and mix 2 cups of water and allow it to boil until the brinjals are cooked.
  • Add the mixture and allow it to boil until a fine aroma fills the air.
  • Fry the mustard, curry leaves in oil and add to the dish. If required, add a small piece of jaggery.
