Ingredients used in Chicken in Cumin Sauce
• Onions (finely chopped) - 2 numbers.
• Tomato paste / tomato sauce - 1 can.
• Several fresh tomatoes - 4 number.
• Garlic (minced) - 4 clove.
• Cumin - 1 tea spoon.
• Black pepper - to taste.
• Salt - to taste.
• Chicken (cut into bite-sized pieces) - 1 numbers.
Method:
In a large stew pot, combine everything except the chicken then stir until all are mixed well. Bring to a slow boil then reduce heat, cover, and simmer for about 20 minutes by stirring occasionally. Then add chicken, cover and simmer for another half an hour or more, until chicken is thoroughly cooked. Serve with Baton de Manioc / Chikwangue or Fufu or Rice.
