Ingredients used in Coconut cookies
• Desiccated coconut - 55 grams.
• Egg - 2 tablespoons.
• Butter - 100 grams.
• Sugar powder - 100 grams.
• All-purpose flour - 200 grams.
• Vanilla essence - 1 tea spoon.
Method:
In a bowl, add butter (at room temperature) and cream it. Then add powdered sugar, vanilla essence, egg to the above mixture and mix well. In it, add desiccated coconut powder and whisk it again. Now, let it rest in the refrigerator for about 15 minutes. Then divide into small portions and roll them like rotis . Sprinkle the above-prepared coconut and sugar mixture on top of it and roll it again. Later cut it into even sizes, and arrange the cookies in the tray. Now, bake it for about 15 minutes at 180-degree centigrades and serve it.
