Ingredients used in Colocasia/Arvi Croquettes
• Coriander leaves (finely chopped) - 1/2 cup.
• Green chilis (finely chopped) - 2-3 .
• Colocasia root/arvi/arbi - 500 grams.
• Bread - 4-5 Slices .
• Salt - To taste .
• Oil - For frying .
Method:

Boil (until soft), peel skin and mash the Arvi. In a bowl, combine with Salt, Chopped Coriander Leaves, Chopped Green Chilies and bread. Mash well. Oil your hands and roll into 1.5 inch bullet shaped pellets (if deep frying) flatten (if shallow frying). Heat oil in frying pan (I use a non-stick pan with very little oil however, this dish tastes nicer if deepfried.) Place croquettes on pan and fry, turning over till both sides are crisp and golden. Alternatively, deep fry till golden.
