A nice change from regular scrambled eggs. These eggs come out creamy and soft. Delicious and fast low-carb breakfast.

This recipe produced very creamy, smooth scrambled eggs. The cottage cheese adds a lot of volume to the scramble, so it appeared that I'd used 6 eggs instead of just 3.

Ingredients used in Cottage Cheese Scramble
• Cottage cheese - half cup.
• Eggs - 3 numbers.
• Instant nonfat dry mmlk - 1/3 cup.
• Butter - 2 tablespoons.
• Chives - 1 tablespoon.
• Salt - to taste.
• Black pepper - to taste.
• Water - as required.
Method:
  • Blend together nonfat dry milk, water, eggs, cottage cheese , salt, black pepper and chives.
  • Melt butter on a griddle/ tawa/ skillet; when it gets hot, add the egg mixture and cook over low heat until it set.

Serve hot with bun or bread for a healthy breakfast or brunch.
