Ingredients used in Egg Kurma
• Cumin seeds - 1/2 tea spoon.
• Mustard - 1/2 tea spoon.
• Cooking oil - 2 teaspoons.
• Ginger garlic paste - 1 tea spoon.
• Large tomatoes finely chopped - 4 number.
• Green chilies finely chopped - 2 numbers.
• Medium onions finely chopped - 2 numbers.
• Chopped cilantro (coriander leaves) - as required.
• Hard boiled eggs - 4 number.
• Shredded coconut. - 1/2 cup.
Method:
Heat the cooking oil in a pan, add mustard seeds and let it splutter then add the cumin seeds, saute it. Add the chopped onions and green chilies and saute for 5 minutes till they are soft. Then add the ginger garlic paste and saute for another 4 minutes on low flame. Then add all the masala powders and saute for 3-4 minutes on low flame then add chopped tomatoes, saute for 10-15 minutes by stirring occasionally till the tomatoes are soft and a thick nice gravy is formed. Grind the coconut using 1 cup of water and add to the curry. Let it cook till the curry is boiled and remove from fire. Add the chopped coriander leaves and mix it well. Take the gravy to a dish. Arrange the boiled eggs on top and serve it.
