Ingredients used in Flavoured Ghee Rice
• Coriander leaves - 5 tablespoons.
• Crushed peppercorn - 1 teaspoons.
• Green chillies chopped - 2 tablespoons.
• Cumin seeds - 1 teaspoons.
• Cinnamon 1 - 2 0.
• Cloves - 4 numbers.
• Onion sliced - 1 big.
• Basmati rice / sona masoori soaked in water for half an hour - 2 cup.
• Salt - to taste.
• Warm water - 4.5 cup.
• Ginger garlic paste - 1 tablespoons.
Method:
  • Heat ghee in the pressure cooker on medium flame.
  • Once the ghee melts and hot enough, add cumin seeds, cloves and cinnamon stick.
  • Once the cumin seeds splutter, add the ginger garlic paste, fry till slightly golden brown followed by onions.Fry till nice and golden brown. Drain the water from soaking rice and add it to the fried onions.
  • Fry till the rice is translucent and then add the crushed peppercorns and green chillies. Fry for few seconds and then add the warm water( for better fragrance and taste you could use chicken stock instead of water).
  • Add salt to taste and coriander leaves. Mix well.
  • If using the pressure cooker with a detachable whistle, close the lid and allow the steam to come out and then cover the nozzle with a steel glass or bowl and cook on simmer for 20 minutes Leave it on the stove for 5 minutes more and mix the rice and ready to serve.
