SOFIYANI BIRYANI

Ingredients used in SOFIYANI BIRYANI
• Chicken (skinless) - 250 grams.
• Basmati rice - 2 cup.
• Ghee - 2 tablespoons.
• Salt - 0 to taste.
• Garam masala - 1 tablespoons.
• Bay leaves - 2 numbers.
• Cardamom - 6 numbers.
• Cloves - 6 numbers.
• Cinnamon - 3 stricks.
• Onion - 1 numbers.
• Ginger garlic paste - 4 tablespoons.
• Cumin seeds - 2 tablespoons.
• Yogurt - 2 tablespoons.
• Lime juice - 2 tablespoons.
• Saffron - 3 pinch.
• Milk - 2 tablespoons.
• Red chilly powder - 2 tablespoons.
• Coriander leaves - 1 bunch.
• Mint leaves - 1 bunch.
• Water - 5 cup.
• Chapati dough - 2 cup.
Method:

1. Soak the rice for 30 mins. 2. In a pan add soaked rice, salt, 1 tbs cumin seeds, bay leaves, 3 cardamom, 3 cloves, 1 cinnamon stick and cook it. 3. When the rice is 80 percent cooked drain the water keep it aside. 4. Beat the yogurt and divide into 2 portions. 5. In one portion of yogurt add saffron mixed in milk and keep it aside. 6. Heat ghee in a pan and add 1 tbs cumin seeds, 3 cardamom, 3 cloves, 2 cinnamon sticks and add onion pieces and saute it until golden brown colour. 7. Add ginger garlic paste, red chilly powder, salt and saute it . 8. Add chicken, garam masala powder, plain yogurt, 1 cup water and cook on slow flame. 9. When chicken is 75 percent cooked then add lime juice. 10. Take another pan and add chicken mixture as one layer and then spread saffron mixed yogurt on it. 11. Spread mint leaves and coriander leaves as one layer. 12. Spread the rice on top of it and place the lid on it. 13. Seal the lid with chapati dough and cook for 15 mins. 14. Now flavorful sofiyani biryani is ready to serve.
