Ingredients used in MUSHROOM BIRYANI
• Oil - as required.
• Caraway seeds/shah jeera - 1 tea spoon.
• Bay leaf - 1 numbers.
• Cardamom - 2 numbers.
• Cloves - 3 numbers.
• Biryani flower - 1 numbers.
• Mace - 1 numbers.
• Almonds - 6 numbers.
• Cashew nuts - 7 numbers.
• Curd - 1 cup.
• Pepper corns - 1 tea spoon.
• Onion - 1 numbers.
• Salt - to taste.
• Ginger garlic paste - 1 tea spoon.
• Mint leaves - 1 cup.
• Green chillies - 5 numbers.
• Cumin powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Water - to taste.
• Saffron colour - 1 tea spoon.
• Fried onions - 1 cup.
• Rice - 2 cups.
• Mushroom - 10 numbers.
• Fresh coconut - 1 cup.
• Coriander leaves - 1 bunch.
Method:
  • Take a mixie jar add almonds, cashew nuts,curd, salt as per taste,peppercorns, fresh coconut make it into a fine paste and keep aside.
  • In a pan add oil, whole garam masala (caraway seeds, bay leaf, cardamom, cloves, biryani flower, mace), sliced onion, salt as per taste,ginger garlic paste and mix it well. Saute all these nicely.
  • Then add mint leaves, chopped green chilies, coriander powder, cumin powder and cook it well.
  • Now add coconut mixture into the whole garam masala pan and mushroom cook it well.
  • Take another pan add water, salt, oil and let it boil. Add soaked rice and cook it 90% done.
  • Later transfer the cooked rice, top it with brown onion, coriander leaves, saffron color and ghee. Put on lid cook for 5 minutes.

Serve with raitha.
