Ingredients used in GARAM MASALA POWDER
• Cumin seeds - 1 cup.
• Black pepper - 2 cup.
• Cardamom - 1 (1/2) cup.
• Cinnamon stick - 2 large.
• Cloves - 1 cup.
• Coriander seeds - half cup.
• Bay leaf - (8 - 9) no.
Method:
  • Dry roast all the above spices on slow flame till they are slightly colored and grind to a coarse powder and store it in a tightly sealed container.

Usually garam masala is not used as the key ingredient, it is actually used to improve the taste.

 

This is the spicy and warming spice combination, and used in numerous types of meats and veggie dishes. It's always best to be added at the end of cooking, sprinkled sparingly, as not to overwhelm the dish.

 

Method to prepare:

 Garam masala has peppercorns (black & white), bay leaf, cinnamon, cardamom (black & green), cloves and sometimes star anise also.

All these are pan broiled and ground collectively to make garam masala.

 

Advantages of Garam Masala:

 The name literally indicates “hot or warm spices” which isn't to state that Garam Masala is necessarily hot or spicy.  It is known that the spices used to make Garam Masala make the body warm.  There is also medicinal along with digestive benefits.

Would it be better to suggest halving the recipe so that one may not 'waste' a whole lot before tasting it. If one does not cook so often to use all up in 8 months, making a smaller quantity is wiser.
