i tried many varieties in this, but everything failed except for this which always comes good , and hit in all pot-lucks

Ingredients of gutti vankaya

Ingredient Name Quantity Unit
cilantro chopped  2 Teaspoons
onion small  1
tomato  1/2
dry roasted unsalted Planters peanuts  1 ` Cup
round small eggplants/brinjals  12 Piece
salt   To Taste
red chilli powder   To Taste
turmeric  pinch Piece
oil  2 Tablespoons


Directions
to peanuts add salt, red chilli powder, and turmeric and grind to a dry powder. to it add finely chopped onions, tomato, and cilantro. mix thoroughly. slit the brinjals in the center like a plus mark towards the stalk. (do not seperate the brinjal completely) Put them in salt water. stuff the above filling in the brinjal and press it so that extra filling will come out. in a wide kadai/skillet put some oil. then place these brinjals one by one side by side. place the lid and let cook on medium unitl the bottom side is cooked. slowly turn one by one to the uncooked side, let cook for another 5 min. then add the remaining paste slowly in between the brinjals, and place the lid again. let cook for another 5 min until done. (If u want more gravy u could make more peanut mixture)
