Ingredients used in Jollof Rice
• Chicken bouillon cube - 1 numbers.
• Chicken or beef - 3 lbs.
• Scotch bonnet pepper - 2 numbers.
• Large red onion - 1 numbers.
• Tomato - 4 numbers.
• White long grain - 4 cup.
• Salt - to taste.
• Cooking oil - 3 tablespoons.
• Mixed vegetables - 2 cup.
• Tomato paste - 2 teaspoons.
Method:
Partially cook rice, drain and set aside Blend together tomatoes, onion and scotch bonnet Heat oil in a pot, add blended mixture Cook this until the water completely disappears and oil starts to show Add tomato paste and cook well Add the chicken or beef, add enough water to cook and cover When meat is tender add the mixed vegetables, salt and bouillon Add the rice, cover and cook on very low heat When the rice is completely cooked, itrsquo;s ready
