Ingredients used in Junkha
• Oil - 3-4 tablespoons.
• Salt - 0 to taste.
• Coriander leaves to garnish - 1/4 cup.
• Turmeric - 1/2 teaspoons.
• Peanuts - 1/4 cup.
• Dill leaves - 1 bunch.
• G.chillies - 4 numbers.
• Freshly grated coconut - 4-5 teaspoons.
• Tomato - 1 big.
• Onion - 1 big.
• Gram flour - 50 grams.
• Mustard seeds - 1/2 teaspoons.
• Curry leaves - 10 leaf.
Method:
1. Mix the gram flour with some water to make a medium paste ( not too thin not too thick) and keep it aside. 2. Finely chop the onion, tomato, G.chillies and dill leaves. 3. Coarsely grind the roasted peanuts. 4. Make fine powder of 1#39;#39; cinnamon ( you can less if you don#39;t like too much) 5. Heat Oil in a pan or Kadai, once hot add the mustard seeds. As soon as it starts splutring add onions, fry for some time, add curry leaves, g. chillies, dill and salt ( dill leaves will have natural salt so add very little, you can adjust the salt later on). Fry nicely. Then add tomato, fry for some more time, add turmeric and cinnamon powder. Add grated coconut and peanut powder. Once everything is finely sauted, add about 1 cup of water. As soon as the water comes to a boil add the gram flour paste slowly while mixing continously ( otherwise it will form into a lump). Close and cook for about 5mins on a low flame. Check salt and garnish with coriander leavs. Serve hot with Chapatis.
