Ingredients used in Stuffed Mirchi Bajji
• Sooji/semolina - 1 cup.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Peanut (crushed) - 1 tablespoon.
• Sesame seeds - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Salt - to taste.
• Tamarind juice - 1 cup.
• Lemon juice - 1 tea spoon.
• Water - as required.
• Coriander leaves (chopped) - 1 bunch.
• Chilies (slit) - 7-8 number.
• Chickpea flour - 1 cup.
• Ajwain/caraway seeds - 1 tea spoon.
• Chili powder - 1 tea spoon.
• Cooking soda - 1/4 tea spoon.
Method:
Heat oil in a pan, add mustard seeds when splutter add cumin seeds, crushed peanuts, sesame seeds, lightly saute it. After about a minute of cooking, add sooji by sauteeing it continuously. Then add turmeric powder, salt along with tamarind juice, lemon juice and water and mix well. when it thickens, sprinkle chopped coriander leaves and green chilies and mix properly. Peel the seeds of green chilies, slit and stuff it with lemon upma mixture. Prepare a batter of chickpea flour, ajwain, chili powder, cooking soda by adding water. Later dip the stuffed chili in batter and deep fry in hot oil.
