Ingredients used in Mutton and ridge gourd curry
• Ridge gourd / turai ( chopped) - 150 grams.
• Salt - to taste.
• Turmeric powder - 1/4 tea spoon.
• Onion (chopped) - 1 number.
• Ginger garlic paste - 1 tea spoon.
• Green chillies ( chopped) - 4 number.
• Cumin seeds - 1/4 tea spoon.
• Whole garam masala - 3 numbers.
• Mutton pieces - 250 grams.
• Poppy seed paste - 1 tablespoon.
• Water - as required.
• Oil - as required.
• Mint leaves (chopped) - 1/2 bunch.
• Coriander leaves (chopped) - 1/2 bunch.
Method:
Boil mutton in 2 cups of water and strain the mutton pieces. keep aside. Now, transfer the left over water of mutton pieces in a bowl and keep aside. Heat oil in a pan, add whole garam masala spices, cumin seeds, green chillies, ginger garlic paste, chopped onions, saute it. Add turmeric powder, salt, ridge gourd pieces and mix well. Now, add mutton stock to the above pan and add poppy seeds paste, and let it cook with closed lid till ridge gourd is tender. Then add boiled mutton, cook this along with ridge gourd on slow flame for about 5 minutes. At last, add chopped mint leaves, coriander leaves and mix well. Later, switch off the flame. DeliciousMutton and ridge gourd curry is now ready to serve.
