Ingredients used in Pepper Chicken Fry
• Black and green cardamom - 2 pieces.
• Nutmeg - pinch.
• Cinnamon stick (1 inch piece) - 2 number.
• Cloves - 8-10 numbers.
• Coriander leaves - 1 bunch.
• Green chillies - 5 to 6 numbers.
• Ginger-garlic paste - 1+1/2 tablespoons.
• Tomatoes(chopped) - 2 large.
• Onions(chopped) - 3 large.
• Pepper corn - 15 - 20 grams.
• Chicken skinless - 1000 grams.
• Jeera/cumin seeds - 1 tablespoons.
• Oil - 2 tablespoons.
• Turmeric - 1/2 teaspoons.
• Salt - to taste.
• Pudina leaves/mint leaves - 1 bunch.
Method:
  • In a pan add 1 tsp oil and fry jeera, pepper, 1 onion, coriander and pudina leaves slightly, to this add cloves, cinnamon, cardamoms and fry for few mins.
  • let it cool and make a paste by adding little water. Keep aside.
  • Now take a pan, add remaining oil, onions and fry till it becomes light in color, later add tomatoes and saute for few minutes.
  • Then add chicken pieces, salt, turmeric and boil for 5 to 10 minutes. The chicken will give out water by itself. Only if required add some water.
  • Add ginger garlic paste and the ground masala paste to the chicken and let it cook till done and dry. Just before switching off the gas add nutmeg powder to it and remove from fire.
  • The number of chilies and pepper can be altered as per taste. It goes well with chappati or rice also.
