Ingredients used in GREEN CURRY CHICKEN
• Whole black pepper - 1 tablespoon.
• Cumin seeds - 1 tablespoon.
• Corrainder seeds - 2 tablespoons.
• Baby corn - 3 numbers.
• Egg plant - 1 number.
• Fresh corriander leaves - 2 bunch.
• Fresh basil leaves - 2 bunch.
• Lime [ juiced ] - 1 number.
• Salt - to taste.
• Chicken [ cut into thin 1 inch strips ] - 1 (1/2) pound.
• Chicken broth - 3/4 cup.
• Unsweetened coconut milk - 3 cups.
• Thai green curry paste - 3 tablespoons.
• Fresh ginger [ coarsely chopped ] - 1 tablespoon.
• Lemon grass [ white bulb ] - 1 number.
• Green bell pepper [ cut into wedges ] - 1 number.
• Onion [ cut into 8 wedges ] - 1 number.
• Vegetable oil - 2 tablespoons.
• Green chillies - 7 numbers.
• Shallots [ chopped ] - 2 numbers.
• Garlic cloves [ crushed ] - 4 numbers.
• Corriander sprigs [ hand ful ] - 3 bunch.
• Ginger 2 inch piece , coarsely chopped - small.
• Lemon grass stalks [ white part ] - 2 bunch.
• Water - as required.
Method:

To prepare green curry paste :

  • Heat the coriander, cumin seeds, and peppercorns in a small dry skillet for 2 minutes until fragrant.
  • Put the seeds in a grinder and buzz the spices to a powder.
  • Put the spice blend and remaining ingredients in a food processor, and pulse to combine.
  • Pour in the water to help grind everything down into a paste.

To make curry:

  • Place a large, deep skillet over medium heat and coat with the oil.
  • Saute the onion and green peppers for 3 minutes to soften.
  • Split the piece of lemongrass down the middle and whack it with the flat side of a knife to open the flavor.
  • Add the lemongrass, ginger, curry paste and lime leaves to the skillet and stir for 2 minutes. Pour in the coconut milk and chicken broth.
  • Lay the chicken pieces in the mixture to poach; add a pinch of salt. Stir together and simmer over low heat for 10 to 15 minutes.
  • Squeeze in the lime juice and shower with basil and cilantro.
  • serve with jasmine or basmati rice.
