Tomato-Basil Soup with Orzo

Ingredients used in Tomato-Basil Soup with Orzo
• Tomato (chopped) - 4 cups.
• Apple juice - 1/4 cup.
• Onion - half number.
• Garlic - 2 cloves.
• Red bell pepper (chopped) - half cup.
• Vegetable stock - 1 cup.
• Orzo pasta - 1/3 cup.
• Fresh basil (chopped) - 1/4 cup.
• Olive oil - 1 tea spoon.
Method:
  • In a soup pot, heat oil and apple juice over medium heat.
  • Saute onion, garlic and pepper 8 to 10 minutes, stirring frequently, until onion is soft but not brown.
  • Add tomatoes and broth; bring to a boil.
  • Then add pasta; cook 5 minutes, stirring. Cover; simmer over low heat 15 minutes.
  • At last add basil.

Serve hot.
