Ingredients used in Beans and Bamboo Shoots
• Bamboo shoots - 1 numbers.
• Potatoes, peeled, and cut into ½-in. cubes - 2 cup.
• Black-eyed peas, soaked overnight - 1 cup.
• Red chilies - 3 numbers.
• Cumin powder - 1 tablespoons.
• Coriander powder - 1 tablespoons.
• Chili powder - 1 tablespoons.
• Garlic, minced - 1 tablespoons.
• Ginger, minced - 1 tablespoons.
• Turmeric - 1/2 tablespoons.
• Freshly ground pepper - 1/2 tablespoons.
• Chicken or vegetable broth - 1 cup.
• Yogurt - 1 cup.
• Chopped tomatoes - 1 cup.
• Mustard oil - 3 tablespoons.
• Salt - to taste.
• Chopped cilantro for garnish - 1 tablespoons.
Method:
  • In a saucepan heat oil, fry dried red chillies until dark.
  • Add onions and sauteuntil light brown.
  • Add cumin, coriander, chilli powder, ginger, garlic, salt, and pepper. Fry for 1 minute under low heat.
  • Add potatoes to the onion mixture and saute for 5 minutes on medium heat. Sprinkle water if it starts to burn.
  • Add soaked beans, bamboo shoots, tomatoes, yogurt, and broth to the potatoes mixture, stir well.
  • Bring to a boil, and let simmer for 15-20 min. Under low heat until potatoes are fork-tender, and the gravy has attained its desired consistency.
  • Garnish with chopped cilantro. Serve with rice or roti.
