Ingredients used in CREAM OF FRESH MUSHROOM SOUP
• Leeks chopped - 1/2 cup.
• Thyme - 1/2 tea spoon.
• Flour - 1/2 cup.
• Sugar - pinch.
• Salt - to taste.
• Chopped onions - 1/2 cup.
• Chopped garlic - 1 tea spoon.
• Mushrooms chopped - 1 cup.
• Chicken stock - 3 cups.
• Butter - 1 tablespoon.
Method:
Heat butter in a pan, add chopped garlic, chopped onions, mushroom, salt and saute them. Then add pinch of sugar, cook for till mushrooms are slightly golden in color on slow flame. Add dry thyme, flour, chopped leeks, chicken stock, boiled for 10-15 minutes, once cooled blend and transfer in to the same bowl. At last, condition the cream with some hot soup and add it into the soup.

Chef, when the soup is finished, add a good amount of dried mint (spice) at the end. Make sure to add it at the very end, otherwise mint wil become black, it should stay green in the soup.
