PUMPKIN AND APPLE SOUP

Ingredients used in PUMPKIN AND APPLE SOUP
• Butter - 1/2 tea spoon.
• Ginger(finely chopped) - 1/2 tea spoon.
• Cinnamon - 2 numbers.
• Onions - 1 number.
• Salt - to taste.
• Pumpkin(grated) - 1 cup.
• Apple(finely chopped) - 1 cup.
• Sugar - 1 tablespoon.
• Orange zest - 1/2 tea spoon.
• Orange juice - 1 tablespoon.
• Lemon zest - 1 tea spoon.
• Lemon juice - 2 teaspoons.
• Mint leaves - 1/4 cup.
Method:
  • Take butter in a hot container then add ginger, cinnamon and sauté it.
  • Now add onions, salt, and mix it properly.
  • Once it becomes little transparent add grated pumpkin and sautés for just 1minute.
  • Add apple pieces with water, sugar and cook for 3-5 minutes with a lid on it.
  • After 5 minuteswhen the apple pieces become soft switch off the flame and remove the cinnamon stick aside to blend it.
  • When the paste is ready to add orange zest, orange juice, and lemon juice into it.
  • Add a little salt if needed and garnish with mint leaves.
