Ingredients used in simple eggless sponge cake
• Vanilla essence - 2 teaspoons.
• Baking powder - 2 1/4 tablespoons.
• All purpose flour - 2 1/4 cup.
• Evaporated milk - 500 ml.
• Sugar - 1 cup.
• Margarine - 1/2 pound.
• Nutmeg - to taste.
• Oil - 1/3 cup.
Method:
mix softened butter and sugar with electric cake mixer until the sugar is fully incorporated in the butter. then add the evaporated milk in 4parts, beating at high speed to incorporate as much air in the mixture as possible. The mixture should look a bit separated (butter separates from the liquid milk). Add flour, in 4 parts reducing the speed of the cake mixer. (Folding) Add the baking powder using the same slow speed/folding action Continue to fold adding oil, nutmeg and vanilla essence. The mix is ready, and should be placed in a well greased baking dish that is about 1.5 inches deep. The oven should be preheated for about 7-10 mins before the cake goes in at 350 degrees F. The cake stays in the oven for approximately 40 mins at the same temperature (350 degrees F).
