Cut tomatoes in pieces. In a think bottom kadai, add very little oil (just enough for mustard to sputter) add mustard and wait for it to suptter. Now add tomatoes and mix well with the mustard and the oil. Leave it mediium flame for nearly 15 mins. Occasionally stir it. See whether the tomato is nicely cooked and the quantity should have come down. Now add turmeric powder, red chilli powder and salt and stil it well. Leave it in low flame for another 20 to 30 mins. Now all the water should be evaporated and the color should turn darker. In a separate kadai or add the remaining oil and add hing and methi powder and let it cook well.
