Ingredients used in tomato khatta
• Fresh coriander leaves - 1 small bunch.
• Salt - to taste .
• Mustard oil - 3 teaspoons.
• Ginger (optional) - haif inch piece.
• Garlic (must) - 6 (big) clove.
• Black mustard seeds - half teaspoons.
• Green chillies - 2 to 3 numbers.
• Ripe tomatoes - 250 grams.
• Water - to taste .
• Sugar (optional) - to taste .
• Curry leaves (optional) - 1 springs.
Method:
heat oil in a non-stick pan. add mustard seeds and let them splutter.add chopped garlic and brown them a little.add curry leaves. add tomatoes,salt,ginger and chopped green chillies. (don#39;t add water now). let the tomatoes cook very well and become a fine paste like a chutney. (many people add little sugar,but its optional). then add water to get the desired consistency.. garnish with finely chopped coriander leaves. serve hot.. it goes extremely well with rice,dal and subzi....
