Ingredients used in Vahrevahs Semiya Payasam
• Milk - 1/2 gallons.
• Cardamom, saffron - .
• Raisins-1 tbspnuts(cashews/almonds)-2 tbsp - .
• Vermicelli/semiya(roasted or unroasted) - 1/2 bag.
• Sugar - 3/4 cup.
• Butter/ghee - 1/4 cup.
Melt Ghee/Butter in a heavy bottomed saucepan-Add nuts until lightly colored.Then add rasins and saute until they swell-(do not over cook or this will become bitter)-If using unroasted vermicelli-add to the ghee and roast until colored.Now add milk and bring to a boil-Then add sugar, saffron and continue to cook on sim for 5-10 mins-until vermicelli is soft.Now turn off the flame.If you overcook this the vermicelli will become soggy and dissolve
