Ingredients used in Veg Chops Curry
• Egg plant - 1 cup.
• Oil - as required.
• Ridge gourd ( chopped ) - 1/2 cup.
• Raw banana ( sliced ) - 1 number.
• Cashew nuts ( chopped ) - 7 number.
• Fennel seeds - 1 tea spoon.
• Tomatoes ( chopped ) - 1 number.
• Ginger ( chopped ) - 1 tea spoon.
• Garlic ( chopped ) - 1 tea spoon.
• Onions ( chopped ) - 1 number.
• Curry leaves - 3 springs.
• Salt - to taste.
• Coriander powder - 1 tea spoon.
• Red chili powder - 1 tea spoon.
• Green chillies ( chopped ) - 1 tea spoon.
• Water - as required.
• Coriander leaves ( chopped ) - 1 bunch.
• Pepper powder - 1 tea spoon.
Method:
  • Cut eggplant, ridge gourd, raw banana into thin slices, deep fry in hot oil, transfer to a plate and keep aside.
  • Heat oil in a pan, add cashew nuts, fennel seeds, chopped tomatoes, ginger, garlic cloves, saute for about a minute and blend to a fine paste.
  • Heat oil in another pan, add chopped onions, turmeric powder, curry leaves, salt, coriander powder, red chili powder, green chilies, prepared paste along with water and cook for about 4 to 5 minutes.
  • Then add fried raw banana, eggplant, ridge gourd along with chopped coriander leaves, crushed pepper to the same pan and cook well.

Veg chops curry is now ready to serve
