Ingredients used in vegetable parata
• Oil to fry , jerra or cumin, turmeric powder and salt - to taste.
• Large onions and green chilies - 2 each numbers.
• Florets of broccoli, few beans , 3 cabbage leaves and peas - few numbers.
• Carrot and potato or sweet potato - each 1 numbers.
• Wheat flour or atta - 3 cup.
• Coriander leaves - to taste.
• Garam masala - 1/2 tablespoons.
Method:
Clean and cut all the vegetables and put everything together in a pressure cooker with half a cup of water , salt and turmeric powder until cooked properly. Drain the water out of the vegetables and keepaside (may need while kneading). Onions coriander leaves and green chillies should be chopped finely . Add oil in a pan , add jeera and let it crakle then add onions , chillies and fry till golden brown.add garam masala to it and now add the vegetables, smash nicely and keep it aside and let it cool. add coriander leaves with it. after 10minutes add atta with it and knead to a soft dough. if hard use the water that u drained out from vegi. let the dough rest for 15-20 mins now roll into round shaped pratas and fry with little oil on the pan and serve hot wit either raitha or dal.
