Vegetarian Muffaletta Recipe, How To Make Vegetarian Muffaletta Recipe

Not rocket science...but a vegetarian alternative to this YUMMY sandwich for a crowd. Learn the recipe of Vegetarian Muffaletta by vahchef.

Muffaletta sandwiches, named for a Sicilian bread brought by immigrants to New Orleans, are usually loaded with cured meats, pickles and cheese. Our vegetarian version of the sandwich is short on meat but not on flavor.

Ingredients used in Vegetarian Muffaletta
• Round italian bread - 1 number.
• Eggplant - 1 number.
• Sweet red pepper - 1 number.
• Sweet yellow pepper (roasted) - 1 number.
• Bitter greens - 1 bunch.
• Onion - 1 slice.
• Black olives (chopped) - 1 tea spoon.
• Roma tomatoes - 1 slice.
• Pesto sauce - 1/3 cup.
Method:
  • Cut top off of bread and scoop out some of the insides (save for croutons or bread crumbs).
  • Layer ingredients thinly, starting with grrens on the bottom, ending with pesto sauce on the top.
  • Add top of bread and wrap tightly. Let sit 2 hours or more.
  • Cut into wedges serve.
