Ingredients used in Egg Cube Curry
• Coriander leaves (chopped) - 1 bunch.
• Red chilli powder - half tea spoon.
• Coriander powder - 1 tablespoon.
• Raw pistachio powder - 1 tea spoon.
• Tomato puree - half cup.
• Ginger garlic paste - 1 ½ tea spoon.
• Milk - 2 cups.
• Onion (chopped) - 1 number.
• Cumin seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Eggs - 10 number.
• Cilantro (chopped) - half bunch.
• Salt - to taste.
• Oil - as required.
Method:
In a bowl add onions, Cumin seeds, cilantro, redchilli powder, salt, garam masala powder along with eggs. Whisk the mixture well. Transfer the mixture to another container steam it. It can be steamed in oven or the steamer. Cut the steamed eggs into cubes .These cubes can be used in any kind of curry. For Milk sauce curry :- Take a pan add oil in it. Add mustard seeds allow it to crackle then add cumin seeds , onions, salt, turmeric, ginger garlic paste, raw pista powder saute well. Add milk to the mixture bring it to a boil.Then add coriander powder, chilli powder, mix well. Reduce the heat add tomato puree at once to avoid curdling of milk. Add salt ,coriander leaves cook the sauce further. Add egg cubes at this point cook for 2 minutes. Serve it with roti/rice.
