Mysore Pak
No festival is complete without a delicious Indian sweet. Mysore pak is one such sweet which is very popular and specially prepared for Diwali in most of the houses. Mysore pak is usually served as dessert prepared of generous amounts of ghee (clarified butter), sugar and chick pea (besan) flour.
 
Mysore pak was originally known as Masoor (Dhal) pak and was made of Masoor dhal flour (Besan). The origin of the recipe is unknown. Some say Mysore Pak was first created in the kitchens of the Mysore Palace by a palace cook named Kakasura Madappa out of the above ingredients.

  1. ghee - 2 - cup
  2. Gram flour - 1.5 - cup
  3. sugar - 2 - cup
  4. water - 1/2 - cup

Instructions

  1. mix besan gram flour with little ghee and sieveTake sugar in thick bottomed saucer.Add water and let it boil to form sugar syruptill it is soft ball stage.Melt the ghee in a bowl.Now add the flour slowly to the sugar syrup and mix rapidly so that no lumps are formed. Then add the hot ghee to the flour , stirring continuously .Cook till the mixture becomes frothy and ghee seperates. Spread out on a greased plate. Cut into squares when firm.

Mysore Pak is a popular south Indian sweet prepared with bengal gram flour, sugar and ghee. Cooking of Mysore pak takes less time but needs more practice to know the exact consistency to get the exact texture and color. If sugar is added more than your Mysore pak would become hard like a rock. If not experienced than it is always better to prepare mysore pak by taking help from somebody else.

Mysore pak prepared in home are really awesome if done in the right way. Besan flour is high in fibre and protein and a source of iron and folate but as Mysore pak is prepared using Ghee its high in fat and calories. Diabetic patients to refrain from eating Mysore pak as it’s a bit sweeter than other sweets.
