1. Take a bowl, add semolina, cumin powder, coriander powder, ginger garlic paste, carom seeds, salt and mix nicely. 2. To it add all purpose flour and mix it, later add yogurt and mix nicely to make dough allow it rest for 5-10 mins. 3. Divide dough into small portion and roll into poori and deep fry in hot oil. 4. Now puffed up sooji dahi poori is ready to serve and can be used for pani puri also.

Sooji halwa is one among the other halwas which is very popular Indian sweet dish. It’s very simple and fast to cook. Semolina in India is called as Sooji, Suji or Rava.

Sooji halwa is also popularly known as Kesari bath in the south region and Sheera in the northern region of India. Often Sooji halwa being the easiest sweet dish is prepared on religious occasions as Prasad (offering to God). Sooji halwa is prepared during several festive occasions. It is also prepared when you get surprise guests visiting your house and when there is nothing available its one of the easiest sweet dishes to be prepared in a very less time.

Nowadays to give a twist to the routine sooji halwa many chefs add pineapple pieces, to give a real juicy and yummy taste.

Preparing the Sooji halwa is very easy. You need to melt butter or desi ghee in a heavy bottomed pan. Add nuts like the cashew nuts, almonds and then add raisins and roast lightly until the raisins swell like a balloon and give a nice golden color. Add sooji or semolina and fry nicely till you get a nice aroma from the semolina. Sooji fried in ghee emanates a scrumptious aromatic flavor. Add sugar and mix and than add water. Boil it well it the water is absorbed add a pinch of saffron and salt, the salt enhances the sweetness and gives a nice flavor to the sweet dish. Bring it to halwa consistency and cover it with a lid. People who like to have more sweetness in their Sooji halwa can slightly increase the quantity of sugar as per their taste. Wow! A very simple tasty sooji halwa releasing it’s the great aroma of ghee.

  1. Take a pan add butter,dry fruits little brown colour,add sooji and mix well fry till it changes it colour to brown.
  2. Now add sugar mix well,salt,add water,colour (optional) cook for 5mins close it with a lid.
