Sooji halwa is also popularly known as Kesari bath in the south region and Sheera in the northern region of India. Preparing the Sooji halwa is very easy. You need to melt butter or desi ghee in a heavy bottomed pan. Add nuts like the cashew nuts, almonds and then add raisins and roast lightly until the raisins swell like a balloon and give a nice golden color. Add sooji or semolina and fry nicely till you get a nice aroma from the semolina. Sooji fried in ghee emanates a scrumptious aromatic flavor. Add sugar and mix and than add water. Boil it well it the water is absorbed add a pinch of saffron and salt, the salt enhances the sweetness and gives a nice flavor to the sweet dish. Bring it to halwa consistency and cover it with a lid. People who like to have more sweetness in their Sooji halwa can slightly increase the quantity of sugar as per their taste. Wow! A very simple tasty sooji halwa releasing it’s the great aroma of ghee.

- butter – 1/2 – cup
- dry fruits – 1/2 -cup
- salt – pinch – pinch
- sooji – 1 – cup
- sugar – 1 – cup
- water or milk – 0 – as needed
- Take a pan add butter,dry fruits little brown colour,add sooji and mix well fry till it changes it colour to brown.
- Now add sugar mix well,salt,add water,colour (optional) cook for 5mins close it with a lid.
