Ingredients used in METHI KHICHDI
• Fenugreek - 5 bunch.
• Coriander leaves - 1 bunch.
• Mint leaves - 1 bunch.
• Yellow grams - 1 cup.
• Rice - 500 grams.
• Onions - 2 numbers.
• Green chilies - 5 numbers.
• Tomatoes - 2 numbers.
• Ginger garlic paste - 2 teaspoons.
• Turmeric powder - 1 teaspoons.
• Red chilli powder - 1/4 tablespoons.
• Oil or ghee - 4 teaspoons.
• Whole spices (all garam masala) - 1 teaspoons.
• Salt - 1 to taste.
• Garam masala powder - 1 teaspoons.
Method:
  • First chop onions and green chillies finely into slices.
  • Wash fenugreek leaves and keep it aside.
  • Soak rice and moong dal for few minutes.
  • Heat oil or ghee in apan and add whole garam masala spices(cloves, asafoetida, cardamom etc).
  • Then add onions, green chillies and saute it. Now add ginger garlic paste, finely chopped tomatoes and cook it on slow flame.
  • To this add fenugreek leaves and saute it, then add red chilli powder, turmeric powder, salt, four glasses of water, then boil it.
  • When water boils, then add soaked yellow gram and rice to cook.
  • Once it is cooked garnish with mint leaves and coriander leaves by which the dish tastes good.
  • Then sprinkle garam masala powder finally and now the dish is ready to serve.
