Ingredients used in POTATO WEDGES PHONIX STYLE
• Potato(long slices) - 8-10 numbers.
• Corn flour - 3 tablespoons.
• All purpose flour - 1 tablespoon.
• Salt - 1 pinch.
• Spring onions(chopped) - 1 cup.
• Oil - to fry.
• Star anise - 1 number.
• Dry red chillies - 5 numbers.
• Garlic(chopped) - 1 tablespoon.
• Celery(chopped) - 1 tablespoon.
• Vinegar - 1/2 cup.
• Red chili sauce - 1/2 tablespoon.
• Tomato sauce - 1 tablespoon.
• Tasting salt - 1/4 tea spoon.
• Sugar - 1/2 tea spoon.
Method:
Cut the potato into long slices. Take a bowl and add corn flour, all purpose flour, salt, little water and make a thick slurry. Dip the potato pieces in the batter and coat it with spring onions and keep aside. Heat oil in a pan and deep fry the pieces on slow flame. Heat oil in the another pan and add star anise, dry red chili and saute it. Add garlic, celery, vinegar, red chili sauce, tomato sauce, tasting salt, sugar, little water and saute it. To it add fried potato wedges and toss it. *Now the potato wedge phonix style is ready to serve.*
