BRINJAL AND POTATO CURRY

Ingredients used in BRINJAL AND POTATO CURRY
• Onion - 150 grams.
• Eggplant - 150 grams.
• Turmeric powder - 1/2 teaspoons.
• Salt - 0 to taste.
• Curry leaves - 1 springs.
• Red chilly powder - 1 tablespoons.
• Cumin powder - 1/4 teaspoons.
• Coriander powder - 1/2 teaspoons.
• Tomato - 3 numbers.
• Dry coconut powder - 1 tablespoons.
• Garam masala - 1/4 teaspoons.
• Oil - 3-5 tablespoons.
• Coriander leaves(chopped) - 1/4 bunch.
Method:

1. Heat oil in a pan and add onion, little salt, turmeric powder, curry leaves, potato, eggplant mix it once. 2. Add red chilly powder, cumin powder, coriander powder, salt and cover it with a lid and cook it on slow flame for 10 mins. 3. Now add tomato, dry coconut powder, garam masala and cook it for 2 mins. 4. Now garnish with coriander leaves and serve it with roti and rice.
