BRINJAL EGGPLANT CURD VADA

Ingredients used in BRINJAL EGGPLANT CURD VADA
• Brinjal big - 1 number.
• Green chillies - 4 numbers.
• Cumin seeds - 1 tea spoon.
• Baking soda - 1/2 tea spoon.
• Maida/all-purpose flour - 1/2 cup.
• Salt - to taste.
• Curd - 1 cup.
• Curry leaves - 2 springs.
• Chaat masala - 1/2 tea spoon.
• Onion (finely chopped) - 1 number.
• Coriander leaves (chopped) - 1/2 bunch.
• Bread crumbs - 1 cup.
• Red chili powder - 1 tea spoon.
• Oil - to fry.
Method:
  • Take a electric blender, add curry leaves, cumin seeds, chopped green chilies, cumin seeds, coriander leaves, salt, add curd to it and make it into a fine paste, keep aside.
  • Take a bowl, add maida, baking soda, bread crumbs, red chili powder, salt as per taste and mix it well.
  • Take brinjal slices (which is cut into medium thick roundels), dip into a maida batter.
  • Then take a pan, add oil to deep fry these brinjal slices and keep aside.
  • In a bowl, add the curd mixture that we have already prepared, then put a fried brinjal and add curd to the top of it.
  • To the top of it add chopped onions and chat masala and serve it cool.
