CAPSICUM AND BRINJAL IN HARA MASALA

Ingredients used in CAPSICUM AND BRINJAL IN HARA MASALA
• Brinjal - 3 numbers.
• Onions(slices) - 2 numbers.
• Mint - 2 bunch.
• Coriander leaves - 1 bunch.
• Capsicum - 2 numbers.
• Turmeric powder - 1 tea spoon.
• Peanuts - 1 tablespoon.
• Bay leaf - 1 number.
• Ginger garlic paste - 1 tea spoon.
• Salt - to taste.
• Tamarind - 4-5 pieces.
• Coriander seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Green chillies - 6-7 numbers.
• Coconut(freshly grated) - 1/2 cup.
• Sesame seeds - 1 tea spoon.
• Garam masala powder - 1 tea spoon.
Method:
  • Dry roast some coriander seeds with sesame seeds and keep it aside.
  • Now dry roast peanuts in the same pan and keep it aside.
  • In the meanwhile in a blender take some coriander leaves, fresh mint, green chilies, tamarind, and blend into a fine paste.
  • In the same blender add roasted coriander seeds, sesame seeds, peanuts, salt, grated coconut also to make a fine paste.
  • In a pan take some oil and add cumin seeds, onion slices then saute it.
  • Now add Ginger garlic paste, Turmeric, Bay leaf and mix it nicely.
  • Add pieces of capsicum, brinjal(cut from both the sides leaving the edge).
  • Mix it nicely and cook it with lid on it for 2-3 minutes on a slow flame.
  • After 3 minutes add green masala, little water and cook for 5-6 minutes.
  • Check the seasoning and add little salt, garam masala powder.
  • After 5 minutes of simmering once the brinjal and capsicum is cooked switch off the flame.

Have it with rice and roti’s.
