Ingredients used in Cream of asparagus soup
• Asparagus tips - 500 grams.
• Chicken stock - 2 cups.
• Celery stalk (chopped) - half sticks.
• Onion (chopped) - 1 number.
• Mace - 1/4 tea spoon.
• Whipping cream - 3/4 cup.
• Egg (hard-cooked) - 3 numbers.
• Butter - 1 tablespoon.
Method:
  • Melt the butter in a saucepan over medium heat.
  • Add the onion and celery and cook stirring often until soft but not brown.
  • Then add the stock and bring to a boil. Add the asparagus; simmer for 5 minutes.
  • Now add salt pepper and mace. Remove from heat.
  • Slowly stir in the cream. Reheat gently.

Serve in bowls garnished with hard-cooked egg.
