Ingredients used in cucumber dal
• Toor dal - 1 cup.
• Cucumber - 1/2 numbers.
• Tomatoes (chopped) - 2 numbers.
• Onions (chopped) - 1/4 numbers.
• Lime - 1 numbers.
• Garlic cloves (chopped) - 2 clove.
• Dry red chillies - 2 numbers.
• Cilantro - 1/4 bunch.
• Turmeric powder - 1/4 tea spoon.
• Salt - to taste to taste.
• Mustard seeds - 1/4 tea spoon.
• Cumin seeds - 1/4 tea spoon.
• Oil - 2 tablespoons.
• Curry leaves - 2 springs.
• Hing powder/asafoetida - pinch.
Method:
  • Peel off the cucumber skin and cut into small cubes.
  • Boil toor dal untilmash consistency and keep aside.
  • Heat oil in a pan, add mustard seeds, dry red chilies when splutter add cumin seeds, chopped garlic, cook for about a minute.
  • Then add chopped onion, curry leaves, green chilies, salt, hing, turmeric powder, chopped tomatoes, cucumber and let it cook by adding water till cucumber are cooked at least70%.
  • After that add boiled dal along with a small piece of butter.
  • Cook till desired consistency then squeeze in lime juice.
  • At last, garnish with chopped coriander leaves and serve it with hot rice.
